Aam Panna popsicle with pomegranate and mint

Summer is a season for enjoying delicious and colorful fruits.One of the most loved fruit is mango.I love mango.Anything and everything with mango entices me.I usually conduct little experiments into my kitchen which i believe to be is my laboratory and one of them is my Aam panna Popsicle.Now how does not like a Popsicle that too a mango Popsicle with the goodness of pomegranate,mint and mango of course.For this recipe making the aam panna is the only task which requires a tiny bit of laboring into the kitchen.Rest is just prepared in matter of minutes.


Ingredients Serves-4 Popsicle


  • 1 large raw mango pulp
  • Sugar as per taste
  • 1/4th tsp of salt
  • 1/2-1 tsp of roasted jeera powder
  • Handful of mint leaves
  • 1/2 cup of pomegranate seeds
  • Mint leaves as required for the Popsicle
  • Popsicle molds


Method

  • For the pulp i have pressure cooked the entire mango with the skin upto 3-4 whistles.Once that done i have removed the skin which should come off easily and the seed.I have even used the water in which i had boiled my mango.Rest the liquid untill it's cooled down.
  • Take a mixer and pour all the ingredients(mango pulp,sugar,roasted jerra powder,salt,mint leaves) into the jar and give it a blend.Once that's done  strain the liquid and your aam panna is ready.Adding sugar depends on the tartness of the mango.Atleast 1/3rd-1/2 cup of sugar is necessary.The end result of the aam panna that i made was a semi-thick liquid rather than a runny liquid.Now while making Popsicle you can add the semi-thick liquid or you can add a bit more water to dilute the aam panna.But if you decide to dilute add a bit more sugar.When making amma panna Popsicle another thing that needs a special mention is the level of sweetness.while freezing it the level of sweetness decreases a bit.So you should keep that in mind and add in the sugar.
  • Now take the molds and fill the bottom with pomegranate seeds and mint leaves.Then pour in the aam panna till the brim of the molds (i have used 4 molds)
  • Refrigerate it atleast for 6 hours(into the freezer) or overnight.And your yummy aam panna Popsicle is ready.Run the mold under running water to bring them out of the mold and Enjoy the summer with the delicious Popsicle and Slurp it up! :)
