Sweet Pumpkin Soup

During the winter season every household has their own soup recipes which they make and relish.I personally love tomato soup and mixed vegetable soup.Soups can be both filling and tasty.One can prove it's versatility by altering and adding various spices or vegetables.People in the west usually prefer their soups to be mild.Whereas,we Indian's prefer ours to be a bit spicy or a combination of both.But this season why not try something sweet for a change?Yes pumpkin soup can be a new soup in the block.It's sweet,it's creamy and it's delicious.

Ingredients


  • 1/2 cup of boiled and mashed pumpkin
  • 1/4th cup of carrots roughly chopped
  • 1/4th cup of baby corn roughly chopped
  • 1/2 medium sized onion roughly diced
  • 1 cup of vegetable stock or pumpkin stock
  • 2 small cinnamon sticks
  • salt to taste
  • pepper to taste
  • 1 tsp vinegar
  • 1 tbsp of oil
Method

  1. Heat up oil in a pan.
  2. Add in the cinnamon sticks.Stir for few seconds till the aroma comes out.
  3. Mix in the onion.Cook till the color of the onions change.
  4. Add in the carrots,baby corn and Pumpkin pulp.Cook till the carrots and baby corn becomes soft.
  5. Add in the stock,vinegar,pepper and salt.
  6. After one boil puree the entire mixture in a blender.
  7. Re-heat the same pan and pour in the puree.Cook it it attains the consistency of a soup.Skim out the impurities that gather around the edges.


  8. Serve it hot and Eat it up!:)
