what happens when you tell an Indian to Cook an Italian pizza?well,the Pizza gets an Indian makeover.Yes,that is what happened into my kitchen a while ago.While experimenting with my pizza i ended up making this yummylicious pizza.With this Indian touch it gives the pizza a whole new dimension.Moreover,this pizza is made on stove top.So for those who love pizza but don't own an oven or are scared to use it this is a win win situation.This recipe is divided into three parts.One is the pizza base,second is the palak paneer topping and finally assembling the pizza

- 1 cup of all purpose
- 1/2 tsp of dry active yeast
- 1/2 tsp of granulated sugar
- 1/4th tsp of salt
- 1 and 1/2 tbsp of olive oil/vegetable oil
- lukewarm water
- 1/2 tsp of dry oregano and chilly flakes (optional)
- Add flour,salt,sugar,yeast,1 tbsp oil in a mixing bowl(i always sift my flour).Mix everything thoroughly.
- Pour lukewarm water little at a time and knead it into a soft dough.
- Once everything is incorporated place the dough on a clean kitchen counter.Add 1/2 tbsp of oil,crushed dry oregano and chilly flakes and give a mix on the counter itself.
- Add the dough and start incorporating the oil,oregano and chilly flakes into the dough.Knead atleast for 5-6 minutes or till the oil disappears into the dough and it becomes springy.
- Once that done rest the dough into a greased bowl (greased with little oil) and cover it with kitchen cloth for atleast 20-30 minutes.After the resting time the dough should be double in size.Take out the dough and knead the dough again for 1-2 minutes to release the air inside it.
- Roll out the dough in shape of a pizza.Keep the base thin or thick as per your choice.
- Rest the base for another 10-15 minutes.Meanwhile prepare the topping.
- 100 grams paneer
- 1-1 1/2 cups of spinach leaves
- 1 tbsp of each of chopped capsicum,tomato
- 2 tbsp of chopped onion
- 3-4 chopped garlic cloves
- 1 1/2 tbsp of tomato ketchup
- 1/2 tsp of green chilly sauce
- 1/2 tsp of chilly flakes
- Few mint leaves
- 1/4th tsp of crushed dry oregano
- salt to taste
- To make things easier and faster heat oil in a pan and once the oil is hot toss in all the chopped veggies(excluding the spinach) including the garlic cloves.Saute them till the vegetable are cooked.
- Add in the spinach and cook till its welted.Add in the paneer and mix well.
- Pour tomato ketchup,green chilly sauce,oregano,chilly flakes and salt to taste.Mix everything well and the topping for the pizza is ready.

- tomato ketchup/pizza sauce
- mozzarella or processed cheese
- chilly flakes (optional)
- Heat up a greased pan(lightly brush the pan with bit of oil) and place the pizza base.The flame should be medium low.
- Once one side of the base is cooked flip the base and apply ketchup or pizza sauce on the base of the pizza.followed by the palak paneer topping and a generous sprinkle of cheese.Again apply another layer of topping and then followed by shredded cheese and chilly flakes(optional).
- Cover the pan and cook the pizza on very low flame for 2-3 minutes or till the cheese melts.Your cheesy palak paneer pizza is ready.Cut the pizza into slices and Eat it up! :)
