Cheesy rava uthappam

Are you bored of stuffing yourself with cheesy pizza's? But still can't get enough of it?Then this recipe is the one for you. Uthappam is a South-Indian dish which is usually served for breakfast. It not only fills up your tummy it also fulfills your craving for cheese.Without further ado let's look at the ingredients and the recipe.

Ingredients serves-4 uthappam approx


  • 1 cup semolina or rava
  • 3/4th cup yogurt
  • 1/2 cup water
  • 1 large finely chopped onion 
  • 1 medium sized finely chopped capsicum or bell pepper
  • 1 large finely chopped tomato
  • 1/2 cup of finely chopped coriander or cilantro
  • 1 green chilly finely chopped
  • 1 cup of grated cheese.(any cheese will do.i used mozzarella cheese and normal processed cheese) 
  • 1 tsp of salt
  • 1/2 tsp of red chilly powder or paprika powder 
  • 1 sachet of Eno (without any flavoring)
  • 1 tbsp of mustard seeds(optional)
  • Oil for frying
Method

  1. Take a large bowl and add semolina,yogurt and water into it.Stir till the batter gets free of any lumps.The consistency of the batter should not be too runny or too thick. It should be such that when u hold your whisk or spoon in the air the batter should drop slowly from the surface of the whisk or spoon.
  2. Add salt,red chilly powder and chopped green chilies into the batter and stir it thoroughly.
     
  3. Once when you are ready to fry up the uthappams add the sachet of Eno into the batter and give a quick mix.
  4. Now take a frying pan and heat it up with some oil.(i used a tsp of oil).Once the oil is hot add the mustard seeds.Let it sputter in the oil.(You can avoid the mustard seeds if you wish to and instead of that you can directly pour your batter once the oil is hot.)
  5. Pour one ladle full of batter and spread it in a round shape with the help of the back surface of the ladle. It shouldn't be too thin or too thick.(now it's not mandatory to make it round)
  6. On the surface of the uthappam add in the toppings like tomato,capsicum,onion,coriander and cheese. This is were you can be innovative and add toppings of your choice.Close it with a lid and let it cook.
  7. Once you see the edges turn golden you know that your uthappam is ready to be flipped.With the help of your spatula flip it on the other side and fry till the crust turns golden.(I kept it for 1-2 minutes each side)
  8. After you accomplish frying a uthappam continue doing the same with the rest of the batter.
  9. Serve the delicious uthappam's when hot. And don't forget to serve it with any chutney or relish of your choice that compliments this uthappam.(I served it with a mouthwatering onion chutney) So what's holding you back? Come on,Eat it up! :)
