Beetroot puri

Being a Bong myself puri or as we call it luchi is an essential part of us.Sunday breakfast is usually meant to be phulko luchi(puffed luchi or puri) paired with aloor dom (aloo ki sabzi).This combination can never go wrong.But there are times when the taste buds demands for a variation.This beetroot puri can be tried to please the urge for making something different.There are a lot of people(including me) who are not that fond of this vegetable.But this recipe can be a breakthrough.It is not only filled with the benefits of the beetroot but also it gives that plush red color to the puri's which looks absolutely mesmerizing.

Ingredients Serves-15 small puri's


  • 1 cup of whole wheat flour or all purpose flour
  • 1 whole beetroot diced
  • 1 tbsp of semolina
  • 1 1/2 tbsp of vegetable oil
  • 1/4th tsp of salt

Method
  1. Take the beetroot in a mixing jar.Add little water and churn it into the mixer for a pulpy consistency.
  2. Strain the mixture to separate the pulp and the juice of the beetroot.
  3. Take a large bowl.Add the flour,semolina,salt and oil.Give  a quick mix.
  4. Add in the beetroot juice little by little and keep mixing.Make a smooth dough out of it.It's need not necessary to add the whole beetroot juice.Use only the amount that is needed to make a dough.

  5. Meanwhile heat oil in a pan or kadhai for deep frying.
  6. Pinch small balls out of the dough.Rub a bit of oil on the surface where you are going to roll the puri.Place the ball and flatten it with your fingers.Roll it in the shape of puri with the help of a rolling pin(i still can't make a round puri yet.But the practice is still on).The puri's shouldn't be too thick or too thin.
  7. Once the oil is hot place the puri carefully into the oil.The oil shouldn't be smoking hot.Fry it like a normal puri.If it does not puff up on its own then take the back surface of your ladle and tap it gently on the surface of the puri making them drown into the oil.It'll puff up immediately.
  8. Fry the rest of the puri's in a similar way.Drain the excess oil with the help of a paper towel.Serve it with any sabzi (i served it with sukhi aloo ki sabzi)and Eat it up!:)
