Sukhi aloo ki sabzi (potato curry)

This dish is one of the simple dishes to make.So this is an ideal recipe for those who aren't that confident when it comes to cooking.As the name suggests it's made with potatoes.It is an humble ingredient which is very often misunderstood or ignored due to the starch content.What some of us don't realize is that potato even has various vitamins and minerals that are good for us.So an alternate consumption can't be fatal for you.This sabzi or curry is usually dry and thus can be consumed with puri's and roti's as well.

Ingredients Serves-2 ppl
  • 2 large potatoes
  • 1/2 tsp of mustard
  • 1/2 tsp of turmeric
  • 1/2 tsp of red chilly powder(i used kashmiri red chilly powder)
  • pinch of asafoetida (hing)
  • Few curry leaves (i had the dried ones)
  • 1 tbsp of oil
  • salt to taste
  • Chopped coriander for garnish
Method
  1. Dice the potatoes into medium pieces.
  2. Heat oil in a pan.Add mustard seeds,curry leaves and asafoetida.Let the curry leaves and mustard splutter.
  3. Once the aroma of the asafoetida comes out add in the potatoes.Mix well.
  4. Add in the turmeric,chilly powder,salt.Mix all the spices well with the potatoes.Add in a cup of water so that the potatoes gets cooked.Cover it up with a lid.

  5. As the curry is meant to be dry hence there shouldn't be any water left.The potatoes should soak in all the water.To check if the potatoes are cooked or not take a piece and break it with a spoon.If it breaks without any hindrance you'll know it's cooked.At times due to the quality of the potatoes it takes longer and more water to get cooked.In that case add more water.you can even par boil the potatoes before making this recipe.
  6. Sprinkle chopped coriander on top.Serve it with roti's or puri's and Eat it up! :)
