Spaghetti with mixed vegetables and sausage

There are times when your mind is running wild with a lot of recipes but still you have no clue to what to make to suppress your hunger.Well,this happened to me today and i stormed down to my fridge and mentally made a note of things that i wanted.I call this my "Jugaadu recipe".

Whenever spaghetti comes into our mind we think of Italian pasta dishes,right?But why not change this a bit and twist it with a bit of Chinese?You'll love it,trust me.I made it today morning itself.It was yummy.I added 2 pieces of leftover chicken sausages.I had bought the frozen ones that had Italian herbs in it.You can add any sausages of your choice.You can add slices of paneer even if you want to avoid meat. 

ingredients Serves-2 people


  • 1 packet of spaghetti (i used 3/4th portion of the packet)
  • 1/2 cup of blanched vegetables(use any vegetables you like.I used capsicum,carrot,beans)
  • 1 medium sliced onion
  • 3 cloves of garlic chopped
  • 4 roughly diced cherry tomatoes (optional)
  • 2 tsp of red chilly sauce
  • 1/4th tsp of green chilly sauce
  • 1/2 tsp of dark soy sauce
  • 1 tsp of vinegar
  • salt to taste

Method

  1. Boil spaghetti in a pan with water,little salt and few drops of oil till it's al dente (something that is cooked but still has a bite to it).I boiled the spaghetti in the same water in which i blanched my veggies.
  2. Heat oil in a pan.Add the sausages and fry till light golden.
  3. In the same pan add another 1 tbsp of oil and add the onion and garlic.Cook till it changes color.(Don't change the pan.The crispy crust left on the bottom of the pan after frying the sausages will add to the flavor of the spaghetti)
  4. Add all the vegetables and cook for a while.Add in the sausages,too.
  5. Add red chilly sauce,green chilly sauce,soy sauce and vinegar.Mix well.
  6. Add in the spaghetti and salt to test and mix well.Serve immediately and Eat it up! :)
