Having spent a part of my childhood in the Southern part of India lemon rice has been a part of my childhood memories.I remember i used to carry a shiny steel double decker lunch box to school which had two compartments.Like all Indian mom's my mother used to feed me more than my tummy could take.Thus both the compartments of my lunch box would have been stuffed with food.My boxes used to usually consist of tomato rice,chapati and sabzi and at times lemon rice.The zingy aroma of lemon rice dominating my lunch box was irresistible.This recipe is a very humble one with rewarding results.It takes only few ingredients which might be already available in your kitchen right now yet it tastes very delicious.Left over rice can be used to make this recipe.
- 1 1/2 cup of cooked white rice
- Juice of 1 lemon
- 1/2 tsp of mustard
- 1 tsp of urad daal
- 1 tap of chana daal
- 1/2 tsp of turmeric powder
- 2 dry red chilly
- Pinch of hing
- few curry leaves
- Handful of peanuts and cashew nuts
- 1-2 green chilies
- Handful of chopped coriander
- 1 tbsp of oil
- Salt to taste
- Heat oil in a pan and once hot add in the mustard seeds and red chilies.
- Once the seeds starts to crackle.Add in the urad daal and the chana daal.
- Once it becomes a slight golden in color toss in the green chilies,peanuts and cashew nuts.
- Stir constantly as the cashews have tendency to burn quickly.Add in the curry leaves and hing stir till it releases it's aroma.
- Add in the turmeric and salt.Mix well.Add the lemon juice.
- Toss the cooked white rice into the pan.mix everything well.Garnish it with chopped coriander.
- Your easy and mouthwatering tangy lemon rice is ready.Grab a plate and Eat it up! :)
- You can even add grated ginger.
- If you feel that its too sour due to the lemon juice add in few grains of sugar to balance the tartness.
